Best Practices for shaping the mapping part of an SOA application?

I am slowly studying SOA and have not yet found an answer to the following question: who draws the display? How often do they do it? Is there one centralized service that knows what the whole application looks like and displays it completely, or are services able to display themselves?
I will also be happy just with links to useful articles / books on the subject specifically and SOA in general.
