Is it possible to schedule a backup using 7-zip or similar archiving software?

Of course.
7z is perfectly controlled from the command line.
Write a startup line and put it in the task scheduler or in cron - depending on what axis you have.

Yes, but the classic zip is better.
If Windows - even better RAR, archiving in zip.
something like
zip.bat:
start winrar a -r -m1 %1.zip
run zip myarchname
eats everything :) in the folder from which it is launched
