Such a thing:

There are several mailboxes on the host server. Sizes from very minimal to several gigabytes.
All this needs to be backed up automatically. Preferably in some easily accessible format, Maildir for example.

Well, or another option: is there any tool that allows us to drag several mailboxes from server to server (imap / exchange) in a pack?

Please suggest some resources.

imapsync

fetchmail ( wiki ) or any other mail collector. You can also collect postfix 'om, specify the conditions.
