Are there hardware/semi-hardware RAID controllers that can boot from a RAID 1 array of 3 or more drives?
If so, which ones? Brands/models/lines? Do they support SSD?

I don’t know when it appeared, but there is a RAID 1E that uses an odd number of disks:
for 3x, a separate block is written to each disk and then again with a shift.

But the fault tolerance of 1E out of 5 disks is less than R10 out of 4.

Concerning R1E-HotSpare against R10 disputes do not subside :)
Supporting controllers - Adaptec. 6 and 7 series, they know SSD, but I won’t say about booting, in theory they should, I didn’t check it myself.
7 series can use R1/R1E from SSD for write caching!
