Are there any cameras capable of streaming video over HDMI without "internal coding"?

In general, we need cameras capable of transmitting a video stream with a minimum delay (<0.02 sec.)
I tested 6-7 cameras with hdmi output from nikon, sony, canon ... everywhere the delay is 0.06-0.13 sec.
I so understand it due to "internal coding".
It seems that I found usb 3.0 cameras (industrial), where an uncompressed video stream is transmitted via usb 3.0, but due to the use of the usb 3.0 interface, a small delay will also be quite difficult to obtain on a computer.
Are there any options for cameras, without internal coding and preferably with an hdmi interface (or display port)?
Preferably at high speed. (>60fps)

@martensit

Encoding on a chip is fast
You're digging in the wrong place
If you need a high-speed camera, then look for one, not a webcam
Or collect a pack of such cameras and try to synchronize them
