Are all sites on one server or on several?

Greetings. I would like to hear good advice or, even better, an example.
Any vds servers now cost a penny.
Does it make sense to take several servers of cheap servers for 10 sites of the same type (online stores)? For example, if one falls down, then at least some of the sites worked.
Although there are problems with the support of all this goodness.

Optimally - one server (Dedik or VDS) and it has a lot of VPS on LXC or OpenVZ.
If you need fault tolerance, then regular copying to a second dedicated server or VDS (preferably from another host and in another DC).
