Which is better, and what is the difference?

Animation consists of frames, so if you need more fine-grained animation control, then use animation , i.e. keyframes and intermediate values.
And for a simple transition animation .
Simply put:
transition - for "start-finish"
animation animation - for animation in which you need to control frames
