Adjust http response on the fly

There is a flash toy that periodically sends http post requests to the server and receives responses to them.
Question: is it possible to intercept the response on the fly, process it, change it if necessary and send it further to the browser?
Why you need it: there is trading in the game and the server responses contain information about who trades for what. I would like to "tag" good deals

Thanks in advance

@McCoder

You can, only if it does not encrypt them.
www.charlesproxy.com/
Also, with the help of a proxy, you can record requests and repeat them several times.
