Working with Composer, how to stake Updates?

Hi Forum,
this is the situation:
I'm working with some kind of framework, I'm finishing a project. I'm uploading to the Server .... and it doesn't work.
There's been an update and that's it.
For example, working with Symphony, there are many components and dependencies.
You can somehow make it so that when deploying to the Server, everything is loaded the same way.
Versions of components and other packages..
There is no way to work with Docker :-( Maybe you can somehow adjust this with the composer?
