There is a small site on wp, landingos for selling the course.
I fasten the payment Yandex.kassa and paypal to it. So you need to use woocommerce.

I need to put the "Buy" button without creating any product, which will lead to the checkout page (I have a plugin to bypass the basket). The question is - how to put a simple "Buy" button without creating the product itself?)))

No way. You need to create a product - the course itself, and use the shortcode to display the buy button. which will lead to the checkout page. Well, set up redirects from the product archive and from the product page to the main page, since this is a landing page.

To sell one product, WC is not needed, any payment has a simple script for such purposes, it is enough to pass parameters to it and parse the response
