Those. let's say your site is in dev1, you copy the files to dev2, remake the site, and then in Apache in the virtual host specify document root'om dev2? If so, then it will not affect the positions in any way.

Make a 301 redirect from the old pages to the new ones. My SEO advice is never to delete a page, but to always 301 redirect to another page with similar content.

If you are talking about changing the path specified in the DocumentRoot (in the case of the Apache web server) to a new one, i.e. about changing only the internal behavior of the web server, nothing will change in the eyes of the search engines. Search engines only see the HTTP headers (well, the request body itself) returned by your server. Internal settings are hidden from them.
If your manipulations also involve changing the URL, then use a redirect, as suggested by max_mara .
