Why won't Thunderbird and Outlook recognize WoSign's SSL certificate?
There is an SSL certificate for the name, for example www.example.com. The certificate is issued by WoSign. Browsers when connecting via https to www.example.com react to it normally. I set up mail on the server. Added this certificate to hMailServer for IMAP protocol (port 993) - Thunderbird complains: "Certificate verification failed - issuing party is unknown"

Make 3 tables. What is the problem ? The average project usually has more than 10 tables.
Do not try to make a single entity for everything, this is the path to unnecessary complexity. In cms in php, it is customary to make one entity and shove it into all places, and therefore cms are considered an example of a bad approach. For example, this is done in Bitrix, there is an entity "infoblock" and this is some kind of nonsense of a gloomy genius who did not want to make everything ordinary tables. Of the ha of these infoblocks, Bitrix slows down like a turtle. Ordinary tables for one entity in Bitrix are called infoblocks 2.0 and are presented as modern technology.
In general, do not be wiser and do it as simply as you can.
UPD. The WoSign CA is not listed in Thunderbird's root trusted CAs.
