Why is there no C++17?
On docs.microsoft.com, in one of the guides I stumbled upon this interesting vs2017 screen:
Why don't I have c++17 in the same C++ project settings, only c++14?
Checked updates on my 17th studio - latest version

Because the screenshot is marketing. C++17 has not been finalized yet. That is, it does not yet exist as such in the form of a release, although no changes will be made. And even when they accept it, it will be a million years before the studio starts supporting it. Set it to latest and don't worry.
