Why don't shops without sellers appear?

Indeed, from a technical point of view, it is not difficult to implement such a thing.
A man entered the store, chose goods, punched at the checkout, put money into the terminal, received a check and change, and left.

>>>put money into the terminal, got a check and change
You're talking about automatic stores, but you carry cash with you? :D

The UK is full of self-service terminals.
From the noticed problems:
1. You still need a person, but rather a few because the terminal is stupid, and sometimes the old women cannot figure it out.
2. There are difficulties with the sale of goods by weight and by the piece.
3. A very large field of action for scammers (replacing a barcode, one product breaks through, two puts (it is solved by checking the change in the weight of the bag, but see paragraph 1), there is also a problem with one’s bags, there is also the issue of selling alcohol (minors and on expensive alcohol there is a safety tag)).
4. Some points (for example, wholesale, i.e. a large quantity of the same product) are solved much faster by the cashier (scans one product and enters the quantity)
5. Self-service does not always and everywhere speed up the process, increasing waiting times, queues, etc. Although it may be cheaper to set up more machines than to hire another cashier ...

You will be surprised, but there are even shops with home delivery (optional) and payment by card (also optional).

Products? Then the seller is needed to lay out the goods permanently, to remove expired goods from the windows and everything else, it goes without saying that I don’t need help choosing sausages. Something I don't seem to understand. In any supermarket, I come, take a trolley, pick up what I need, then go to the cashier at the checkout. Somehow I don't need sellers in this case.

In the context of “a store without salespeople” and discussions of “automating operations in factories”, for some reason, the last thing I think of is jobs. How can people earn a living after all this automation?

Appear. In Norway, there is not even a cash desk in such stores - there is just a house, farmers bring fresh vegetables there in the morning, wash the floor in the evening and shovel out a cup of money. Electronic scales, open money cup.
It's a matter of mentality

Because not everyone is able to choose equipment on their own - they need the help of a sales assistant. And those who can choose for themselves, buy in online stores or choose online and buy goods silently in the store. Something like this.

Because a person will enter the store, select goods and leave, bypassing the cash register and payment. Or, there is a guard who will pretend that he paid for something, or he will pay only part of the goods. In short, a person will cheat the system, and the store will suffer losses.

Auchan did something like this in Kaluga. I myself do not live in Kaluga, so I can’t say whether it works there now or not.

I dream of such vending machines at railway stations. I don’t remember how many years I haven’t bought tickets, but once I had to - and a similar thought was my first. It was strange after shopping in online stores to understand that for so many years automatic cash desks had not been created (buying through the site is a bit different, yet there are still people without access to the network, and I needed a ticket with a student discount).

In Novosibirsk, there is such a thing in auchan, there is still a storekeeper in the ru terminal, and in auchan, if without a trolley, then he just punched at the terminal and paid money into the hole and went free.
Unfortunately, we have too many tyryats, they will not take root.
