Why does my MacBook wake up from sleep "rebooted"?
Macbook Pro 15 Touchbar, Mojave
At night I close the lid or press "Sleep Mode", in the morning I open the laptop and in 50% of cases it boots up as if rebooted, i.e. all previously opened programs are closed, programs from autorun are launched, etc.
What can be wrong? All updates that I found turned off.

All updates that I found turned off.Could this be the issue??? Updates fix jambs, problems with rebooting have long been ruled by them.
Most likely you have too many programs at autoload, which slow down the laptop.
I advise you to read this article https://tehnichka.pro/startup-macos-how-add-remove... and follow the instructions to go to "Login Items" to see how many programs are on startup. And if you don’t want to remove autorun completely, you can set up a delayed launch according to the same instructions.
Well, if it doesn’t help at all, then the best option would probably be to reset the MacBook to factory settings.
