Why does gmail remove classes (if checked in the developer panel) in tables when composing emails?

gmail displays just <table>...</table>
Is there any way to fix this?

You still test in Outlook, there is generally horror to bloody tears, and each version has its own.
Therefore, in the layout of letters, you need to use inline styles. But the premailer handles this.
