Why do products automatically go to “Done” after?

There is a site that has both physical and downloadable products. After payment, the downloaded product is sent to the client as needed, and the status changes to completed. But the physical also pass into such a status. What to do?

Maybe there are plugins that will transfer physical goods after payment to the status "in processing"?
