Why are not all fields displayed in the template?

I have a category output template, and I display some information from the product in it.
For example, $fields['field_opt_price']->content
The problem is that it displays half of the fields created in the admin panel for the product, but not for the other half. Writes null and everything
As if some kind of restriction
