Why are in-app purchases on iOS restored?

I'm testing purchases in the iOS app. I delete the application, log out from iTunes, create a new user in the sandbox, reset the iPhone settings. I install the application cleanly, I launch it - from somewhere the application restored purchases from the previous time.
Does anyone have experience dumping information about previous in-app purchases from an iPhone?
