I have experience publishing on xbox360 and ps3. There you send the build to Microsoft and Sony. They test it and watch it for a week and then send feedback. You fix bugs, art, boobs and send it back. May take up to 3 months. Something like that.

It often makes sense to contact the publisher at the initial stage of game development - they can give a lot of valuable advice - both on the genre, and on game design, and on the technical component. But a lot of it also depends on the publisher itself. I had to work with both good and not so good ones.
In good ones, they can assign you a professional manager who will give you a lot of valuable advice on improving the game, they can finance the project, they can do localization into many languages ​​and thorough beta testing (at no extra charge). At the same time, they will take up to 70% of the income from the game (but here everything is individual - how much they are involved in development, the amount of work, etc. - it can be much less). As an example - Alavar. The experience of working with them is very positive, but the percentage is very high.
Some do nothing but promote. They take your application, test it for several hours on a couple of devices, push it to the store and start promoting through their channels. They can take 50% of the income. Not so long ago they had a negative experience with such a publisher, as a result they changed it to another one. Excuse me, I have no right to name specific names.
Some big publishers, like BigFishGames, may not be interested in your game at all, as they are more interested in working with big partners who ship a lot of games.
Promotion on your own, without a publisher, is now more like a lottery - there are chances, but they are quite small. In general, I advise you to first decide on the market you will enter (countries, platforms, age categories, etc.), then start searching for a publisher, taking into account the previously defined criteria. Be sure to look for feedback from those who have worked with that publisher before and look at the experience of the publisher - how many games they have already released, how many of them are successful, etc. For example, it would be foolish to promote a shooter through a publisher if he (the publisher) had previously worked only with applications for children. And from direct communication with the publisher, you can find out the range of their services and conditions.
