Which receipt (thermal) printer to choose?

Urgently needed a receipt printer for printing coupons in the clinic.
In this connection, questions arose:
1. If the software (I have it via the web interface) that generates documents for printing does not support ESC / POS (I don’t know about JavaPOS and OPOS), what printer speed will be enough? Will a speed of 300-350 mm/s be excessive, or will such a printer still outperform one that has a speed of 200-220 mm/s?
2. Does the bell function in the printer only serve to notify that someone has sent a coupon for printing (placed an order for the kitchen, etc.)? In my case, the printer will be used at the clinic reception, so far I have no idea why I might need a call function.
3. In addition to the connection interfaces and the resource of the main printer modules (cutter, thermal head - yes, for now I am considering only thermal printers), what should I pay attention to? Why are epsons so expensive? What is the advantage, for example, of this Epson TM-T88VI model, for whom will it be an ideal choice?
4. What do you recommend, what printers. I need a network connection, a large paper tray, better speed considering my software doesn't support ESC/POS, a good resource...
