Which processor to choose from AMD Ryzen?

Hello everyone) I decided to assemble a PC for my tasks, I can’t decide on a processor.
Choosing between AMD Ryzen 7 2700, Ryzen 5 3600, Ryzen 5 3600x

PC tasks:

1. Working with graphics (Figma, Adobe XD, Adobe Photoshop, Adobe Illustrator, ProtoPie, Spline, Cinema 4D, etc.)
   
2. Editing and working with video (Adobe Premier, Adobe After Effects)
   
3. Working with audio (FL Studio, Ableton)
   
4. Streaming (OBS)
   
5. Good gaming performance
   

Will there be a difference between them, for example, when streaming, because Ryzen 7 has 2700 cores and more threads than Ryzen 5 3600 / 3600x.
As far as I know, the Ryzen 7 2700 is more overclockable than the 5 3600.
What are the pros and cons of these models? (If you can advise other processors in the same price segment as the models above, I will only be glad)

R5 3600. Forget about overclocking
