There is a main domain and there is a desire to make a second site, but already on a subdomain of this domain. I wanted to connect these two sites to one database by adding a perfix so that the tables are separate. (DLE capability). Is this approach normal or is it better to create a separate database? Perhaps and most likely there will be more such sites on subdomains. I want to know how normal this is?

I am using fastpanel.

I now have 4 sites there and for each a separate database with its own user. Is this the norm? When I did this, I thought about security, saying that if one is hacked, then other databases use other passwords. Although, as for me, if the database of one site is hacked, then I think they are "within a stone's throw" to others)

Yes, why not. Do it. The main thing is to clearly understand how it works in order to be able to solve them in case of problems. It will be absolutely great if you also make regular backups (and make a backup right before setting up the whole thing).
