Which operating system to choose for office network architecture?

Good afternoon!
Please tell me what operating system it is desirable to use in the office for 15 laptops with average parameters, for about 15 computers, if we have one small server with 2 zones and 32 GB of RAM and any database from all these computers. Interested in bit depth and type of OS.

Look at the software that will be running both on the server and on the clients. Often there is no choice at all (for example, the software used is only for Windows).
Virtualization is possible on the server, because for 15 computers, you probably have a fairly good server. But this, of course, depends on the load that the server will pull. You can choose Linux+kvm|xen|.../ESXi/MS Hyper-V as a hypervisor. In the case of virtualization, it is better not to combine the role of a hypervisor on the host with something else - let virtual machines do something else.
If the software you use allows you to choose an OS, then include other selection criteria: the ability to work with the OS of both admins and users (although users usually don’t work with the OS - they work with applications), price, etc.
