If you need to wrap only rdp to the server in the vpn, then just add a static route to the rdp server through the vpn-a interface to the system

It seems to me that you have already chosen the simplest and most productive option - an openvpn server on vps and grumbling all traffic to itself when a client connects. If NAT is configured on the VPS, then the IP of the VPS server will light up. I myself use a similar configuration to bypass some blocking and some protection / anonymization when connecting through public networks.
