Which camera to choose?

Please tell me which camera to choose? (in the sense of professional, with full shooting control)
Budget: about $ 500-600 I
started looking towards the Canon EOS 100D, guided by the logic of "newer-better", but looking at the frames that are obtained from it, I have one thought - what the hell just not to use the same iPhone 5S / top-end Lumia / some other cool phone with n-th number of pixels? After all, in terms of quality, they will be about the same. What is the point of using DSLRs now?

In general, I bought a Canon 100D. I took it for work (panoramas, virtual tours), but I will say this - even "home" photos are incomparably better. If you are not too lazy to figure out the "holy trinity" once - shutter speed, aperture and ISO - take any DSLR, preferably as cheaply as possible (the difference between them is only a 3-4-fold increase in the cost of a carcass / lens).
Why? Just try. There are a lot of things painted here, but after the purchase, I thought of only one thing, "Why didn't I buy it earlier?".

I recommend looking at profile sites for photos taken with fixed lenses - then questions about the use of soap dishes and smartphones will disappear.
Full shooting control - does this imply the presence of advanced manual settings?

Budget: around $500-600
- this is the beginning of the middle segment among amateur cameras. The upper amateur segment starts at ~$900.
The price of "pro" entry-level DSLRs starts somewhere from $2,000 and up.
So draw your own conclusions.
