Which Android emulator to choose to sniff app traffic?

Genymotion. And, in general, in the new Android Studio, they say, the speed of the emulator has become higher. I haven't tried it myself, so I can't be more specific.

Yes, you can still sniff on the host system

Install wireshark, select virtual adapter and sniff. I tested it on genymotion, but I think it's the same on others.
