I can’t find the config for OpenVPN-Access Server, not the web admin, but in the console to make edits:
there is no such thing:
/etc/openvpn/server.conf

I would not go into the OpenVpn-AS configs with my hands, they are in json format, to edit you need to stop the server. They are in /usr/local/openvpnas. Anything you want to do is fine edited in the web interface, where you can specify openvpn options directly.
In the Advanced VPN section at the very bottom there are text fields for adding/removing lines to configuration files.
