Where is the category post template located?

Tell me where is the template for displaying posts in the category?

I thought they should be in the category.php file but it's not even created.

In that order. The first pattern found is used.
There is also a nuance with child / parent themes. If you have a child theme, don't forget to look in the parent theme folder.
In general, install the Query Monitor plugin , it will show you which particular template is used, which components (template_parts), and where it all lies.
