Where can I find *nix administration courses?

Here are MIT courses on SaaS , there are certainly courses on IaaS, on other clouds and virtualization, and even on * nix-s. But where to find them? Has anyone come across something like "a selection of courses on server systems and network technologies." Maybe there are collections?

Probably worth starting with books, for example UNIX and Linux System Administration Handbook . And there are articles
on Habré . A similar question was asked not so long ago, though there are not so many answers there ...

Most likely you know about this section, but just in case… http://rutracker.org/forum/viewforum.php?f=1570
For example, here is http://rutracker.org/forum/viewtopic.php?t= 3865110 is a good material, but more suitable for beginners.

There is LPI . These are not courses in their purest form, but a certification system, but they have a lot of good preparatory materials, broken down by levels.

You can see Yandex KIT . They sort out simple, basic things - you can learn something, repeat something, look at something from a new angle.
