(For example, in the article habrahabr.ru/post/119772 it is said that there are many techniques for creating layers on canvas, but I did not find it except for overlaying one canvas element on another.)

And apart from the imposition of one canvas element on another, there is nothing. One layer - one canvas.
Another thing is that you can store, for example, parts of one layer in a buffer (just a canvas that is not inserted into the dom and therefore does not cause a redraw), and then, using various blending / overlay modes, redraw the layer or part of it, achieve interesting effects ... And and it all works really fast.
