When talking about the bootstrap + sass bundle, do I mean the usual bootstrap that only has the source code in sass? Those. is it all necessarily built using gulp type collector? How convenient is this combination? When laying out bootstrap with sass sources, do you need to style everything except the grid in sass?

Настолько же, насколько удобна сборка из дефолтного less.
Если вы имеете ввиду по сравнению с css-версией, то тут зависит от того, насколько хорошо вы умеете использовать препроцессор. Имхо, намного удобнее, небо и земля.
Всё что используете. Лишнее просто отключаете (закомментируете импорты в bootstrap.scss)
