If Cloudflare turns on the proxy option:

cloudflare servers will simply resolve and when switching from browsers, depending on the Host, the direction to the desired site will go.
for the VPS, it will be visible that only the IPs of the CF itself access it, since visitors will not directly reach the server (if the transitions directly via the VDS IP are not counted).
no SSH and other services through the domain will also work, because everything will rest on cloudflare.
Well, as a bonus, the real address of the server will be hidden. except perhaps only if proxying was disabled before, this very address will not be difficult to find through the whois history. so if you are afraid of ddos directly, you should have turned on the proxy initially
