What WAMP\WNMP\WANMP collection would you recommend for an inexperienced AnyKey?

We need the most simple, understandable in use and configuration collection of WAMP \ WNMP and. etc.
In general, what is at the moment:
Winginx - basically suits everyone, but sometimes there are problems with setting up different versions of PHP for different sites. The admin panel (PHPmyadmin, Adminer, etc.) always works on the latest version for some reason. It is not entirely clear how to update/add a new version of PHP or Mysql.
Used to be Xampp. On HDD, RAID began to get very blunt (when the database was swollen and there was a selection from many tables). Nginx seems to be turning around faster.
I will not do a super-megaloaded project, but still, what will be more productive:
1. Apache + PHP + Mysql or
2. Nginx + PHP + Mysql or
3. Nginx + Apache + PHP + Mysql?
Googled a lot. But due to little experience, I still don’t understand why PHP (in Nginx) on Windows does not have an advantage over Apache? There is something about one FastCGI process, and it's like in C ++ ... in short, does it make sense to use Nginx on Windows at all?
I don't know much about Linux, and it will be even more difficult and longer to make on it.
WinNMP is kind of dumb, inconvenient and didn't figure out how to set different versions of PHP for projects.

openserver? You can configure any version of php, mysql, apache, nginx

I once settled on this XAMPP https://www.apachefriends.org. Pretty easy to set up, well documented, available for Windows.
