What UGOs to use in the E3 scheme?

Good evening.
According to the course project, you need to draw an electrical circuit diagram in accordance with GOST, but there were difficulties with choosing a UGO.
The circuit uses a LOGO PLC, a ProGap Solids Level Sensor and a load cell.
As far as I understand, a PLC can be designated 140650_html_457d8a76.pngas an element of digital technology. A load cell is like a variable resistor, but for a bulk material sensor I don’t understand which UGO to choose.
Please tell me if my assumptions about the PLC and the load cell are correct, and maybe someone knows which UGO to choose for the sensor?

And why don't you designate the sensors as a certain block in the form of a rectangle with the letter A and the block number? And from this block to the PLC, bring the required number of connections.
We do this when, for example, a resistive matrix touchscreen is connected to the circuit. On E3, the connector is drawn, where the touchscreen is soldered, on e7, if I'm not mistaken, the blocks show the touchscreen and our board, and a diagram of connecting the touchscreen with the board is given.
