What twisted pair cable should be used in production with machine tools?
There is a three-story building with non-permanent interfloor ceilings, on the first floor of the building there are several machines and several workplaces. Workplaces are also located on the second and third floors. Two of the four machines are powered by 380 volts.
There are a number of questions regarding the laying of the network:
1. Is it permissible to lay a twisted pair cable in a cable duct along with electrical wiring?
2. Which category of twisted pair should be used? CAT7?
3. Is it worth using a shielded twisted pair cable on floors where machines are not located?

Laying a shielded twisted cable next to electrical wiring is allowed, even if 50 Hz noise passes through the insulation, even if it can affect a wire with a double braid around the axis, it cannot affect a signal passing many times higher frequency. The only thing to be wary of with such a gasket is overheating or a short circuit.
Copper with a screen and ground is suitable for you. Be sure to use the latter.

2) if you are afraid of pickups, put flexible optics at a price that will turn out to be almost the same
3) whatever you want, if there are no pickups, then the shielded pair only harms and reduces the possible distance of the cable, as it introduces additional reflection inside the cable.
