What to read in order to quickly "drive" into the topic of video encoding at the application level?

The task can be formulated simply - learn how to quickly convert video files from any format to any using free tools (for example, FFMPEG). Just for myself: I want to learn with minimal losses (in the general sense, not only in relation to quality, but also, for example, audio channels: if there are several languages, I want to save everything, and in general it is better to leave the sound simply untouched, without transcoding if there normal AAC or MP3 format (and there are exotic and even very exotic ones in my collection)) 320x240 (for a smartphone, yes, this is my screen). In general, the answer, of course, is obvious - to read the manual, but I don’t want to embark on such fundamental research for the sake of this, and the FFMPEG command line syntax itself doesn't seem obvious to me from the examples (usually examples are the fastest way I find to learn how to use a utility). Can you share a link to a good tutorial?
