Which color profile is more common for Forga39 or Euroscale v2?
And how important is it to choose the right color profile when creating a layout for printing?

First you need to find out what technology the layout will be printed on.
First, do everything in RGB, and translate into CMYK, only after consulting with a printing house technologist. If the printing is offset, but it is not known where the layout will be printed, and the technical requirements are "standard", then divide by "ISO Coated v2 300% (ECI)"

For color profiles, I strongly recommend that you contact the printing house where you are going to print your layout. In addition, you will learn a lot more (each printing house has its own list of layout requirements).
