What to believe aida64 or Speccy?
I changed the thermal paste in my computer (I tried to spread it with a very thin layer and it seemed to work out) and then I decided to look at the temperature C:, but Speccy shows 25-27 degrees and Aida64 is stable 51 degrees
and what to believe?

What processor? And a radiator.
I have on i7 with a cooler at the minimum speed now 35C. So if you have a cold percent and a very powerful cooling system, then it may well be 27 in idle time.
For reliability, you can boot into the BIOS and look there.
And 51 for downtime is a lot. And 25 is suspiciously small. But depending on what percent.
Curious if anyone has read the question in its entirety?
PS You can't believe anything - because of the peculiarities of the location of the temperature sensors, they show the average temperature in the hospital.
Aida shows more correctly, I doubt that with regular cooling you will have only 27 degrees. Characteristics of the processor write
