What tasks to perform for learning?

Now I'm finishing a book on ES, and as usual - a lot of theory.
To deal with the basic functionality,
I would like to solve several problems that would be solved through analyzers, filters (both standard and custom), or other basic functions.

I would be grateful if someone writes such a list of tasks, with varying complexity.

I myself do not perceive theory well, I prefer practical tasks.
Take some real or imaginary system - a web server, a smart home, Cloudtrail logs - and think of something that would be interesting to see for a business analyst, security analyst, company owner, etc.
