What's the catch (styles)?

Good day !
Forgive me for possibly distracting some with my stupidest question.
But for me it is very important!
why do I need sass - if I can do like this and in sass I can use a variable - mixins. what's the catch ? here sass most likely only works for large projects so as not to get confused. And yet - they say that sass "helps" the browser - how is it? if the browser processes everything exactly - and optimized css and I can write sass without it?
.logo, .search, .menu { text-align: center;}
