Well, for example, RDC has its own design. And the command system is compatible from i80186.
I don't know others.

You can do it on any. We had solutions based on three x86 processors on one board.

The question is not entirely clear. Still, are you interested in microcontrollers or platforms ? For simplicity - ATmega168 is a microcontroller. Arduino Pro Mini is a platform based on it.
Platforms on x86 do. Go to any computer hardware store and ask for mini-ITX motherboards. This is it.
I have not heard about microcontrollers (a microcontroller is a single-chip device!) based on x86.
