What postal service do you recommend?

I was looking for a service that gives mail without a phone - I didn’t find anything except for the proton ..

I think your question is missing "pick any two"
Security is not free. If someone provides you with a service for free, then he somehow earns on something else (or a service of the appropriate quality).
To comply with points 2 and 3, it is best to have mail on your own server. But it's certainly not free (both in terms of server fees and setup effort/specialist fees)
