What is the right way to do proxmox + nginx?
I put the server on proxmox, on one virtual machine there will be nextcloud, there will also be nginx. And there is a separate server nearby, where and how to put nginx correctly to manage everything? On proxmox itself? Driving through nextcloud? Or?
I saw articles on the Internet, they install a separate virtual machine and manage everything, but then how will the configs for SSL https work ... or install nginx wherever necessary and not take a steam bath?

You should not put anything on Proxmox itself. I recommend a separate virtual machine for HTTP resolution - and it is on it to keep certificates.
in general, you should set it as it is more convenient for you, there is not much difference
