What is the name of a sitemap?

When you design a website, you create a page sketch, mockups, wireframe, prototype, and then a production design.
Then (or somewhere between these stages, even at the stage of sketches) all pages are laid out, and links are drawn between them with arrows - when you click on what, go where.
What is the name of such a scheme?

mockups, wireframe, prototype - these are not stages of one project. These are the types of documentation. And usually use one of these. It is also possible to use all three options, but this is not some kind of standardized development plan.
Here is an article on the topic: https://awdee.ru/wireframes-prototypes-and-mockups/
So, in my opinion, your "arrows" can be in both mocap and wireframe.
The more complex the project, the more detailed documentation is justified. But a bunch of documentation for a one-pager will be redundant. Here it all depends on the number of people involved in the development. The more of them, the more detailed documentation is required. Hence the diversity. Trying to transpolate an approach justified for large projects into a mini business card site that one developer makes is as stupid as making project documentation for replacing a filter in a teapot. Everything was invented for something specific, and not for what would you have something to do)))
