What is the best way to create HTML email templates?

As far as I understand, not all css properties are supported in all mail agents / mail web interfaces.
Maybe somewhere there is a comparison of the most popular ones with an indication of which elements will definitely be supported and work (look) the same everywhere?
I think a lot of people have.

And what is the best thing to do if I have a tabular form (8-10 columns) in my newsletter? 600px - looks bad (narrow margins). 1000px is not bad, but it's terrible on a small monitor - they swear.
