What is PANTONE color is not CMYK, not RGB, not LAB what is it then?

Because pantones 801-803 from the screenshot are spot colors, they are not divisible.
In other words, this color is obtained not by overlaying dots already on paper, but by preparing the desired ink in advance (roughly speaking, in a separate can), which is poured into the printing machine in finished form and printed in one pass.
It seems to me that with such knowledge of pantones, it is better not to use them at all.
