When I turn off CMYK colors in the separation preview panel and it does not affect PANTONE colors, I want to understand what PANTONE colors are? Can they, say, be used in RGB or is it only necessary in CMYK space?
But if they are not CMYK then what is the difference between using PANTONE colors in RGB space and CMYK?

Because pantones 801-803 from the screenshot are spot colors, they are not divisible.
In other words, this color is obtained not by overlaying dots already on paper, but by preparing the desired ink in advance (roughly speaking, in a separate can), which is poured into the printing machine in finished form and printed in one pass.
It seems to me that with such knowledge of pantones, it is better not to use them at all.
