What is a provider?

I often see in ServiceProvider, AuthProvider, CryptoProvider, AuthService CryptoService applications. What should the provider do? How is it different from a service?

Service is what implements the very logic of mmm ... service.
ServiceProvider is what gives access to a service or services . That is, something of a facade fraud, behind which there can be different services on the same topic (for example, authentication services).
