What is a competitive, quality software product?

Hello, in one of the branches Where is the least competition on Upwork for a programmer? low-competitive niches were discussed. In general, the result - you need to make a quality product, this niche is small and saturated and there is low competition.
As far as I understand the latest trends of customers, this is precisely the speed of development. But the statement that the customer is primarily looking for a high-quality software product, I think is undeniable. Explain what exactly a quality software product is? What is under it?
