What happens when migrating from Magento Enterprise to Community?

We don't want to pay for Enterprise Magento, we want to switch to a free version, what could it mean? We will not be able to update this for sure, will it still affect it somehow?

what could be the threat?

depending on how you move.
You need to deploy the latest version of Community and transfer the theme, one by one the extensions and see if something falls off.
Community can be updated, patches are still being released, but mostly small updates (the last one was somewhere on 03.2019)
The main thing that is not in CE (from memory)
FPC, magenta support, wider admin roles, action logs for admin, data encryption . The CE version still uses md5 for password hashes, change versions for CMS content and all sorts of stuff for sales
